This spelled differs from other qualities in the larger dimensions of the grains and in the way it looks after cooking, with the grains always well separated and the unmistakable sensory characteristics.
Spelled can be used for specific tasty preparations, such as soups with legumes, minestrone with vegetables, cold salads, but it can also be a excellent substitute in many recipes which use pasta or rice.
For cooking it is sufficient to wash it well under running water and put it to cook in three parts of cold water for each part of spelled; when it starts boiling, add the amount of salt deemed appropriate and the cooking is completed in about 30 minutes.
